Responsibilities and scope of the Head Chef role

The Head Chef will work closely with the rest of the management team to ensure the hotel achieves its goals related to guest satisfaction, employee satisfaction, and profitability.

The Head Chef is involved in the development of new menus and the further refinement of the hotel’s existing food and beverage concepts. This work is carried out within the framework of the Trøndersk Food Manifesto, the quality standards of De Historiske, and the company’s financial capacity for investments, purchasing, and staffing. The process takes place in close collaboration with the restaurant and bar management, as well as other culinary professionals within the hotel.

The Head Chef holds overall culinary responsibility and manages the daily kitchen operations. This includes recruitment and staff development, quality assurance, menu development and costing, purchasing, and responsibility for food safety systems (IK-Mat) and HACCP.

All aspects of the work should support the smart use and continuous development of the hotel’s resources, ensuring guests experience genuine hospitality and memorable stays. The role must foster a safe, inclusive, and developmental working environment where everyone is seen, valued, and respected—contributing to sustainable profitability.

A large part of the workday will involve hands-on kitchen operations. The position requires a high degree of flexibility, with working hours adapted to the hotel’s activity level.

We are looking for someone who

  • Has a minimum of three years of relevant hotel experience
  • Has experience in personnel management and team development
  • Thrives in both operational kitchen work and administrative responsibilities

Bårdshaug Herregård is a family-owned hotel and co-owner/member of De Historiske.
The hotel is located in Orkanger, 40 km southwest of Trondheim. Today’s Bårdshaug Herregård includes the historic manor house and a full-service hotel with 88 guest rooms
